One of my favorite low-effort recipes is roasted potatoes. They work for breakfast, lunch, or dinner and are ready in under 30 minutes.
I discovered this little gem when I wanted something that felt just a bit more elevated. I didn’t want to rely on paprika, garlic, salt, and pepper alone. While those are wonderful staples, I wanted something that took the dish up a notch without being overpowering.
A simple sprinkle of thyme transformed the recipe. Paired with garlic, I was hooked. It’s now in regular rotation in my home and has become one of my favorite comfort foods.
Ingredients
- 1½–2 lbs red potatoes
- 2–3 tbsp olive oil (I love this one)
- 3–5 cloves garlic, minced (optional garlic press)
- 1–2 tsp dried thyme (or 1 tbsp fresh thyme)
- Salt
- Black pepper
Tools
- Large mixing bowl (similar to this)
- Baking sheet or roasting pan (like this)
- Sharp chef’s knife
- Cutting board (these are perfect)
Instructions
1. Prep
Preheat your oven to 425°F.
Wash the potatoes and cut them into:
- Halves if they’re small
- Quarters if they’re medium or large
Try to keep the pieces roughly the same size so they roast evenly.
2. Season
In a large bowl, toss the potatoes with:
- Olive oil
- Thyme
- Salt
- Pepper
If you prefer a cleaner garlic flavor, wait to add the garlic until the end to prevent it from burning.
3. Roast
Spread the potatoes onto a baking sheet or roasting pan in a single layer.
Place the cut side down for the crispiest edges.
Roast for 25–35 minutes, flipping halfway through.
The potatoes are ready when:
- The edges are browned.
- The insides are soft and creamy.
- The bottoms have crispy golden spots.
4. Add the Garlic
About 5–7 minutes before the potatoes are finished, toss them with the minced garlic and return them to the oven.
This keeps the garlic fragrant and flavorful instead of bitter or burnt.
Serving Ideas
For an extra touch, sprinkle the potatoes with grated Parmesan, or add fresh rosemary or sage with a pinch of flaky sea salt for an even cozier flavor.
For breakfast, I love topping them with salsa, avocado, and eggs.
