Lately, I’ve been having such a huge sweet tooth. The other week, I went to the store and grabbed a few snacks, but I was especially excited because I wanted to recreate a dessert I saw on Pinterest. Even though it was just a photo, it gave me all the inspiration I needed to make this decadent vanilla ice cream treat.
It’s really simple, but it feels fancy—perfect if you want something a little special without spending forever in the kitchen.
Ingredients
- Vanilla ice cream
- 1 ripe banana
- Brown sugar
- Butter
- Olive oil
- Pumpkin seeds
- Dates
Directions
- Melt some butter in a pan over medium heat, then add brown sugar and stir to make a smooth caramel.
- Cut your banana into even pieces and toss them in the caramel, stirring to coat. Let them cook for a minute or two until golden and soft.
- Scoop your ice cream into a bowl and top it with the caramelized bananas, chopped dates, pumpkin seeds, and a little swirl of olive oil.
Pour yourself a glass of white or red wine, sit back, and enjoy. It’s one of those desserts that feels indulgent but effortless—a sweet little moment all for you.
